Kaiseki cuisine is an art that enriches the soul, woven by the breath of nature and the beauty of the seasons.

懐石料理は、自然の息吹と四季の美しさが織りなす、心を豊かにする芸術である。

Caribe-Mae Kaiseki: A Culinary Journey Through the Five Elements

Experience an innovative fusion of Japanese Kaiseki and vibrant Caribbean flavors, meticulously curated by Chef Nathan Ryan Neibaur in St. Thomas, US Virgin Islands. This exclusive Caribe-Mae Kaiseki menu invites you on a gastronomic journey inspired by the five elements—Earth, Water, Fire, Wind, and Void—and the timeless wisdom of Miyamoto Musashi's The Book of Five Rings.

Kaiseki Menu

EARTH (地) – The Foundation

Charred Root Vegetable Dashi Miso Soup

Embodying stability and grounding, this course features a robust dashi brewed from charred root vegetables. Its deep, earthy flavors symbolize a strong connection to the soil, laying the foundation for the culinary adventure.

WATER (水) – The Flow

Miso Beet Marinated Snapper Carpaccio with Yuzu Kombu Salad

Signifying adaptability and fluidity, delicate snapper carpaccio is enhanced with a unique miso-beet marinade. Paired with a refreshing yuzu kombu salad, this dish captures the ever-changing essence of the sea.

FIRE (火) – The Transformation

Grilled Lobster with Tamarind Ponzu, Yam Purée & Lemon Butter

This transformative dish showcases spiny lobster grilled over binchotan charcoal, representing change and rebirth. Vibrant tamarind-ponzu gel, creamy roasted yam purée, and a hint of charred lemon beurre blanc infuse the plate with a dynamic Caribbean flair.

WIND (風) – The Unseen Flow

Smoked Coconut & Broth with Citrus Rice, Steamed Mahi, Puffed Rice Pearls

Celebrating the wind's formless yet impactful nature, a fragrant smoked coconut broth is poured tableside over steamed mahi and citrus-infused rice. This course creates an immersive sensory experience that transcends taste.

VOID (空) – The Unknown

Snow-Dusted Matcha Cake with Coconut-Lime Custard & Citrus Dome

Embodying infinite possibilities, this final course presents a delicate matcha cake dusted like fresh snow, resting on a rich coconut-lime custard. Encased in a citrus-infused, smoke-filled sugar dome, it invites you to embrace the ephemeral beauty of culinary art.
